If you are a fan of peanut butter cups, have I got a treat for you! These delightful candies are easy to make and so delicious they are addictive! Three ingredients are all it takes. They can be made in the microwave or in the top of a double boiler. I prefer the microwave. In just a few minutes you can whip up these heavenly bites of creamy perfection. So, let's get started!
Line two 24 count mini-muffin tins with cupcake liners. You can also use candy molds or make larger patties in a standard cupcake tin. There are no hard and fast rules here. I use plain cupcake papers, but there are specialty candy papers available as well.
Ingredients:
1 lb chocolate wafers (I prefer Mercken, Wilbur or Chocoley)
1 lb white chocolate wafers
1 18 oz jar of creamy peanut butter
Place all three ingredients in a large microwaveable container. I use a plastic batter bowl with a pour spout that makes it easier to pour into the cupcake papers which enables you to move quickly before the chocolate sets back up. Microwave on high for one minute and stir with a wooden spoon or a rubber spatula. Continue to microwave in 30-second increments, stirring after each segment. It should take about 3 minutes to melt it all together. Stir well to be sure the mixture is smooth without any little lumps. Fill the cups about 3/4 full. Refrigerate to set up then remove and let sit at room temperature. Store in airtight containers.
