. This yields a batch of around 1 1/2 dozen small cookies. I double it every time I make it because, well, they are just that good. This recipe earned Penny Ann Habeck of Shawana, Wisconsin a Blue Ribbon at the county fair. Not hard to see why! They are delicious!
Award Winning Coconut Macaroons
Ingredients:
1 1/3 cups sweetened shredded coconut
1/3 cup sugar
2 tablespoons all-purpose flour
1/8 teaspoon salt
2 large egg whites
1/2 teaspoon vanilla extract
Directions:
1. In a small bowl, stir to combine the coconut, sugar, flour, and salt. Add egg whites and vanilla extract; mix well.
2. Drop by rounded teaspoonfuls onto greased baking sheets or lined with parchment paper. Bake at 325° for 18-20 minutes or until golden brown. Cool on a wire rack.
