One of the things that I have a huge problem with is deciding what flavor icing to use on my cakes. Buttercream icing is a standard, go-to recipe, but there are times when you need just the right touch to turn that cake recipe from ho-hum to fabulous. This recipe for Peanut Butter Frosting from The King Arthur Flour Baker’s Companion is just such a recipe. It’s simple to make and adds the perfect touch to Devil’s Food Cake or banana cake or really, any cake!
Peanut Butter Frosting
3/4 cup (7 ounces) creamy peanut butter
1 1/2 teaspoons vanilla extract
4 cups (1 pound) confectioners’ sugar
1/2 cup to 10 Tablespoons (4 to 5 ounces) milk
In a large mixing bowl, combine the peanut butter and vanilla. Add the confectioners’ sugar in three parts, alternating with the milk, stirring until you have a smooth, spreadable frosting.
