Crockpot Friendly Recipe
Ranch House Beans
1 lb ground beef
1/2 lb bacon, cut into 1 inch pieces
1/2 onion, chopped
1 large (28 oz) can pork and beans, do not drain (I prefer Valley Gem)
1 12 oz can kidney beans (drained)
2 12 oz cans butter beans (drained)
2 cups ketchup
1 Tablespoon yellow mustard (or to taste)
1 Tablespoon apple cider vinegar
1 cup brown sugar
1/4 cup water
In large skillet, fry bacon pieces until crisp. Transfer to paper towel to drain. Drain bacon grease from skillet, reserving some to saute the onion until translucent. Add ground beef and brown completely, drain and place in crockpot. Meanwhile, drain kidney beans and butter beans and pour into a crockpot, along with pork and beans. In a medium bowl, combine ketchup, mustard, brown sugar and vinegar until completely incorporated. Add water to thin the mixture, stir well. Add to bean and meat mixture and stir to combine. Cook on High for 3-4 hours. Remove lid for last half hour if too much liquid has accumulated and allow to thicken. (If baking in the oven, bake at 325 degrees for 3-4 hours.)
For an interesting variation, add green beans, wax beans, or the beans of your choice. Don’t be afraid to be creative with this recipe. Use more or less burger or bacon, omit the onion or add your favorite barbecue sauce. Customize it to suit your family’s taste. This is a great pot luck dish.
