Jimmy Carter Cake


I have to admit...I was never a fan of Jimmy Carter, but I sure loved his cake!  LOL...

LAYER #1 - Crust
1 c. chopped dry roasted nuts
1 c. flour
1 stick butter
LAYER #2:
1/2 c. peanut butter
8 oz. cream cheese
1 c. 10X powdered sugar
1 c. Cool Whip
LAYER #3:
1 sm. box chocolate instant pudding
1 sm. box vanilla instant pudding
2 3/4 c. milk
LAYER #4 - Cool Whip

Hand mix ingredients in layer #1 and press into greased 9 x 13 inch pan. Bake 20 minutes at 350 degrees. Cool completely.

With a hand mixer, cream together the peanut butter and cream cheese until smooth, then add the powdered sugar a little at a time until well incorporated. Stir in the Cool Whip and spread over layer #1.


Combine the ingredients in layer #3 and spread on layer #2.

Top layer #3 with Cool Whip and sprinkle with chopped dry roasted peanuts and garnish with chocolate shavings. Refrigerator for a few hours before serving to let it set up.
Keep refrigerated.
