Ingredients:
1 1/2 cups uncooked macaroni
3 hard boiled eggs, chopped
1/4 cup chopped onion
1/3 cup chopped green pepper
1/3 cup chopped carrot
3/4 cup salad dressing or mayonnaise
2 Tablespoons yellow mustard
1/4 cup white vinegar
1/3 cup white sugar
Cook macaroni, drain and let cool. Add eggs, onion, green pepper and carrots. In small bowl, stir together mayo/salad dressing with sugar until well mixed. Gradually add in mustard and vinegar. Stir until well blended. Pour over macaroni and stir gently until thoroughly coated. Refrigerate for at least 2 hours before serving. Best when made the day before so flavors have a chance to meld together.
