Ingredients:
2 cups rolled oats
1/2 cup chopped pecans, divided
1 tsp baking powder
1 tsp cinnamon
Scant 1/2 tsp fine sea salt
1 large egg
2 cups milk (unsweetened almond milk or rice milk can be substituted)
2 tsp vanilla
1/4 cup pure maple syrup (plus more for serving)
2 T melt coconut oil
Preheat oven to 375°. Spray 8" square baking dish with cooking spray.
In large bowl, combine oats, cinnamon, baking powder, salt, and half the pecans.
Add milk, egg, maple syrup, coconut oil and vanilla to dry ingredients and stir well to combine.
Pour into baking dish and sprinkle with remaining pecans.
Bake 35-40 minutes, until top is golden brown. Let stand a few minutes before cutting into portions. Serve with a drizzle of maple syrup if you prefer it sweeter.
This recipe is very forgiving and allows for adding or changing ingredients without compromising the end results.
Variations 1. Add 2 sliced ripe bananas when adding the wet ingredients.
2. Add chopped apple (or applesauce) and 1/4 tsp of nutmeg and use walnuts instead of pecans.
3. Add 1 cup of fruit of your choice, blueberries, peaches, pears or berries.
